Mushroom Season

It's the beginning of mushroom season, with the first harvests for wild mushrooms having just arrived. Phan and I went to the farmers market today to buy some.

Can you guess what kinds of mushrooms are these?



The big orange one on the left is lobster mushroom. This one's nice and firm and it does sort of taste like lobster. They're selling for $8/lbs. The mushrooms on the right are Chanterelles, they're $6/lbs. The ones on the bottom are Matsutake, the most expensive, at $32/lbs.




Aaah, wild Matsutake....I wonder what Phan will make out of this. I'm still waiting for the white truffles harvest to come in. Maybe next week.




Tadaaa! The matsutake made its home on this soba noodle atop a bed of crisp organic lettuce, accompanied with purple and red potatos fresh from the farmer's market. The potatoes were baked with grounded coriander and fennel.

The matsutake was out of this world. It was absolutely sumptuous, with flavors bursting with aromatic reverie. Mmmm, delicious. We have to get some more.


Restaurant Update:

Our lawyer have looked over the lease contract and he will be working on writing addendums to the contract this weekend and have it available to us by Monday. Once we receive the addendums, we'll review it with our realtor next week before we send it to the landlord.

The big orange coloured lobster mushroom looks like poisonous mushroom leh.. since it's so colourful ;)

many years ago, i went on a first date with a man who was also a chef. instead of flowers he brought me 2 lobster mushrooms. i thought this was so very cool....until he took them back and said..."you cant keep them!" ha!

wow interesting lobster mushrooms =) never seen before. As for the really pricey ones... saw them as the main dish for one Iron Chef episode and have been wondering exactly how it tastes since then. *sniff*

That looks really delicious! When I was growing up in Portland, we used to go to Mt. Hood to look for matsutake. That was before the mountains were picked clean of matsutake, making them a rare delicacy.
Can't wait until you open your restaurant!

There's a lot of different kinds of interesting looking mushrooms. Oregon's a great place for them, 'cause the weather and forest environment are conducive to their growth.

There're several edible mushrooms out there that we'd like to try out too. Can you get a variety of them at the farmers market down where you are?

I've heard that there're a lot of people harvesting all kinds of mushrooms as a hobby nowadays. You sure gotta know which ones are edible and which ones are poisinous, I'm not familiar enough to tell them apart, so I'll leave the harvesting to those who know! hehe

oh, I am a big fan of mushrooms as well, from Portabella to shitake to chinese mushroom to button mushroom .. between, your (you and your spouse) work are really inspiring! keep up the good work! i look forward to visiting your restaurant sometimes in the near future!

i am so jealous...i cant even find dried porcinis where i live. i'm hoping to move to portland within the next year,so if you see a 40 something woman with curly hair rolling around the mushrooms at the farmers market...

I see that you're in Richmond, Virginia. Can you get a variety of mushrooms over there too? When we're open January or February of next year, you should definately come visit Portland! :o)

We'll be on a lookout for a 40 something woman rolling around the mushrooms next year then, hehe. You'll start seeing mushrooms at the farmers market starting around early September all the way to end of November. October and November is when most varieties are available.

Thanks, I'm sure it will work out. We hope to be able to sign the lease this week. We've gotten several bids from contractors and it looks like we can get the construction done within our budget. Of course, we'll make sure to make sure they're properly licensed, bonded, and insured.
